Veggie Heaven Soup

This creamy vegetable soup is such a treat for the taste buds.  Furthermore, it’s healthy and does not require any artificial flavorings.  I loved it so much that i ended up having two huge bowls.

Soup Wini

Ingredients:

  • 1 chopped onion
  • 2 Garlic Cloves
  • 1 large piece of Ginger
  • 500g chopped Pumpkin
  • 1 cup chopped Carrots
  • 1 Cup chopped Mushrooms
  • 1 Cup chopped Sweet Potatoes
  • 2 Litres Water
  • 1 Tablespoon Olive Oil
  • Salt & Ground Pepper
  • Almond Flakes and Parsley (Garnish)
  • 1 Tablespoon Cornflour (Optional)

Preparation

  1.  In a medium/large saucepan, saute the onions, garlic and ginger in olive oil.
  2. Add your chopped vegetables and a little salt.  Cover the saucepan and cook for 10 minutes, until the vegetables have softened.
  3. Add water and let simmer for around 25 minutes.
  4. strain the vegetables and reserve the liquid in the saucepan itself.
  5. Puree the vegetables in your blender and pour back into the saucepan.
  6. Bring the soup back to a gentle boil.
  7. It should be of a creamy consistency.  If you want your soup to have a thicker consistency, dilute a tablespoon of cornflour in 1/2 cup of water and add to the soup while it is still boiling.
  8. Season the soup with salt and ground pepper according to your taste.
  9. Garnish with a few almond flakes and fresh parsley when serving.
