Vegetable Burgers

If you hate eating red beans, these burgers may help you to change your mind.  Indeed, you can make some absolutely delicious burgers out of red beans and they are great for your health.  These burgers are rich in flavor and you can prepare them in advance.  Store them in your freezer and when you’re ready, just put them in your oven or fry them!

Ingredients:

  • 3 cups boiled potatoes
  • 1 and 1/2 cup boiled red beans
  • 1 cup grated carrots
  • 1/2 Cup finely chopped onions
  • 1 Teaspoon grated ginger
  • 1/2 teaspoon grated garlic
  • 1/2 teaspoon chilli powder or 1 teaspoon of finely chopped green chillis (Optional)
  • 1 cup grated cheese
  • 2 tablespoons finely chopped coriander leaves
  • 1 tablespoon finely chopped mint leaves
  • 1 and a half teaspoon powdered aniseed
  • Breadcrumbs or finely crushed biscuits (Crackers)
  • 2 tablespoons flour
  • 1 cup water

Preparation:

  1. Soak the dried red beans overnight before boiling.
  2. Mash the boiled potatoes and boiled red beans together.
  3. Add garlic, cheese, chilli, coriander,mint,aniseed, ginger, onions and carrots to the mixture and combine well.
  4. Form little patties out of the batter
  5. Mix the flour with the water.
  6. Dip each burger in the water/flour mixture and coat them with breadcrumbs.
  7. Set a greaseproof baking sheet on your baking tray.  Arrange your burgers and sprinkle them lightly with some olive oil.
  8. Cook at 170 C for 20 minutes.  Then, grill them for 5 minutes at 200C to obtain a crispy crust.
