Semolina & Egg Muffins

Oh yummy!  These cute little muffins are going to be a huge hit if you’re having guests over.  They make great starters or you can also have them for lunch!  Semolina makes them very filling and gives them just the right crispiness when you take a bite before feeling the smooth fluffy texture inside.

Ingredients:

  • 150 g semolina (Greo)
  • 100 g all purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 125g butter
  • 1/2 cup milk
  • 3/4 cup grated carrots
  • 1/2 cup corn kernels (Fresh or Frozen)
  • 1 teaspoon mixed herbs

Preparation:

  1. In a bowl, mix the flour, semolina, salt, baking powder and mixed herbs.
  2. In a separate mixing bowl, beat your eggs.  add the butter and milk.  add the flour mixture gradually and continue mixing until it forms a nice batter.
  3. Add the corn kernels and carrots.
  4. Grease your muffins cases or tart cases.  Pour 2/3 tablespoon of the batter in each tray. it must be 3/4 full.
  5. Bake in your oven at 170C for 30 minutes.
