Ginger Chai
Brrr! It’s officially winter here in Mauritius, and let me tell you, things are getting chilly (but in a totally cozy way). Mauritian winter has its perks – comfy sweaters, warm comfy meals and most importantly, steaming mugs of delicious hot drinks!
Speaking of delicious hot drinks, today’s recipe is all about that spicy, warming Ginger Chai. Now, forget fancy measuring cups and following some boring recipe (Haiyaa!). We’re going full-on Uncle Roger Mode here, making this chai by feeeeeeeeling – a little bit of this, a generous sprinkle of that. But the key is using Mauritian black tea, it’s strong, delicious and unique!
This recipe’s perfect for those who like their tea strong with a ginger kick. But if you’re feeling a little less adventurous (or maybe your spice tolerance needs some work!), just ease up on the ginger and use a full cup of milk instead of one and a half cups of water.
Making Ginger Chai is a breeze – it takes just minutes, with the only real challenge being wrestling your grater away from that stubborn knob of ginger (we’ve all been there!). After that, it’s simple – unless you find straining your tea a chore.

Ginger Chai
Ingredients
- 1 TBSP Black Tea Mauritian black tea is the best to use
- 1/2 TSP Fennel Seeds
- 1 Small Cinnamon Stick
- 5 Cardamon Pods
- 1 Piece Ginger Just enough to get one tablespoon when grated
- 2 1/2 Cups Water
- 1/2 Cup Milk
Instructions
- Put water to boil, add tea and other ingredients, except the milk. Cover with the lid.
- Bring to a boil (3 minutes on a high flame), add the milk. Boil for another minute.
- Cover with the lid, leave it to rest for 2 to 3 minutes before serving. Use a strainer when serving.
