Easy Vanilla Cupcakes For Beginners

My journey in the kitchen began with these easy vanilla cupcakes. I still remember the excitement of measuring ingredients, mixing until the batter was just right, and carefully filling each paper case. Yes, I made a huge mess but that didn’t put me off. My heart raced a little as they baked, worried about burning them, but the result was perfect: fluffy, moist, and utterly delicious easy vanilla cupcakes.

Easy Vanilla Cupcakes

Ingredients
  

  • 100 g Unsalted Butter
  • 1 tsp Vanilla Extract
  • 1/2 cup Sugar
  • 1 1/4 cup Self Raising Flour
  • 2 Eggs
  • 1/4 cup Milk

Equipment

  • 1 Muffin Tray
  • 1 Oven
  • 1 Mixing Bowl
  • 1 Mixing Spoon
  • 1 Mixer
  • 16 Paper Cases

Method
 

  1. Preheat your oven at 180C and line up paper cases in your cupcake or muffin pan. If you do not wish to use paper cases, make sure to grease your pan with butter.
  2. With an electric mixer, beat butter, sugar and vanilla in a bowl. You want a fluffy batter. Add the eggs, one by one, beating after each addition. Add in half of the flour and mix with a large spoon. Add and mix the milk and the remaining flour.
  3. Now the tricky part. Use a tablespoon to fill in the paper cases. You need 2 spoonful of batter per case. (fill each case 3/4 full). Bake for 15-20 minutes. Be careful as these cupcakes bake faster than a large cake.
  4. Once your cupcakes are ready, transfer them to a cooling rack.
