Cheese & Olive Scones

These scones are very filling and are perfect either for breakfast or even for a picnic.  You can use them to make little sandwiches and add your favorite garnish!  The Cheese/Olive combo is just perfect.

Ingredients:

  • 250g multigrain/atta flour
  • 250g all purpose flour
  • 3 1/2 Teaspoons baking powder
  • 1 Teaspoon Mixed Herbs
  • 1/4 Teaspoon salt
  • 1/2 cup green olives (diced)
  • 1/2 cup milk
  • 60 g butter
  • 1/2 Cup cheddar cheese
  • 1/2 cup Parmesan cheese

Preparation:

  1. Preheat your oven and line up a baking tray with  a grease-proof baking sheet.
  2. In a bowl, mix all your dry ingredients and the butter.
  3. Add the milk to the mixture and combine into a soft dough.
  4. Leave the dough to rest for at least 30 minutes.
  5. Roll out the dough and cut into round shapes.  You can use a cutter or a glass to do so.
  6. Place the scones on the baking tray and brush the tops with milk.
  7. Bake for 25/30 minutes at 160C or according to your oven.

Tips:

  • You can choose any cheese combination.
  • You can use plain white flour only or combine white flour and wholemeal flour instead of Atta Flour.  The choice is yours.
