Cassava Fritters

I believe that Manioc (Cassava) is so underrated in our Mauritian cuisine.  I know that it is mainly used in sweet traditional dishes.  Yet, Manioc is an important source of Calcium and can be cooked in so many ways!  It’s not limited to sweet desserts!

These Cassava Fritters are very easy to prepare and it’s the perfect Gajak to munch on while watching the World Cup Football games!  They are best served piping hot!  They are crispy on the outside and soft on the inside.

Ingredients:

  • 2 Cups of Cassava (Grind them in your blender)
  • 1/2 Cup Chickpea Flour
  • 1/2 Cup Self-Raising Flour
  • 1 Teaspoon finely cut shallots
  • 1 Teaspoon Thymne
  • 1 finely chopped Chilli (Optional)
  • Salt to taste
  • Oil for deep frying

Preparation:

  1. Mix all the ingredients in a large bowl.
  2. Add water gradually to make a thick batter.
  3. Now it’s time to deep-fry.  Heat the oil on a medium flame.  Once the oil is hot, place spoonfuls of the batter in the oil carefully.  Make sure not to overcrowd your fryer as the fritters need space to cook. Around 5 to 7 fritters at one go should be fine.
  4. Once the fritters turn into a nice golden colour, it means that they are ready!  Serve with your favourite dips or a nice tomato chutney!
