Banana Fritters (Gato Banane)
A typical Mauritian treat, usually served at tea time, the Gato Banane is one that delights everyone. It’s one of my usual go to when there’s too many ripe bananas.

This is an easy and quick recipe with a little twist which adds an extra crispiness to the fritters. With just a few ingredients, you’re in for a very delicious and filling treat.

Ingredients
- 2 Cups of mashed ripe bananas
- 3/4 Cup plain flour
- 3/4 cup maize meal (la poudre mais)
- 1/2 teaspoon baking powder
- around 3/4 cup water
- a pinch of salt
- a handful of raisins (optional)
- 2 tablespoons sugar (optional)
Preparation
- Combine the flour, maize meal, baking powder, mashed bananas, salt, raisins. As ripe bananas are very sweet, I usually don’t add sugar but if you want the extra bit of sweetness, add them at this stage. I also use maize meal which makes the fritters more crispy.
- You want your batter to have a thick consistency. Add the water gradually and keep mixing. It should be thicker than your pancake batter.
- Now, it’s time to deep fry. Heat enough oil on a frying pan. Once the oil is hot, put some spoonfuls of the batter in the oil.
- The fritters are ready when they turn golden brown.
- Serve them hot and enjoy.
