Banana Curry
Today, I’m bringing something truly authentic and Mauritian to Foodwini, a traditional Banana Curry that’s made with green unripe bananas. Truly delicious, this is usually served as one of the 7 cari (7 curries) that you will find in hindu weddings or pujas. Nowadays, you can also find many snacks and food delivery businesses selling 7 cari, especially on Fridays.
For the best Banana Curry, always use green bananas. The unripe plantain bananas are the tastiest for a curry as they’re not sweet at all.
INGREDIENTS:
- 6 green bananas (plantain ones are the best for cooking)
- 2 tablespoons chopped onions
- 1 tablespoon chopped garlic
- 2 small chillies (optional)
- A handful of fresh curry leaves
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 2 tablespoons vindaye mix spices
- 1 tablespoon oil
- 1 tablespoon of fresh coriander leaves
- Salt
PREPARATION:
- Place the bananas in a large saucepan, cover with water and add some salt. Bring to a boil.
- Once the bananas are cooked, remove them from the saucepan and leave them to cool.
- Once they are cool, you can grate them
- In a large pan, add the oil and sauteed the onions for 2 minutes. Add the garlic, curry leaves and chillies. Once cooked, add the turmeric, vindaye spices and cumin. Stir well.
- Add the bananas and mix carefully. Season with salt.
- Once done, garnish with coriander leaves.
