Banana Cake

Mother’s day is coming! Have you planned anything special for your mom? In Mauritius we celebrate Mother’s Day on the last Sunday of May. 

Today, I’m sharing a recipe that I usually make when there’s a lot of ripe bananas and it helps in avoiding food waste. This banana cake is very indulgent despite using whole wheat flour rather than your normal plain white flour.

It’s great for tea time and it’s a great recipe for special occasions too, such as Mother’s Day.

Ingredients:

  • 250g wheat flour
  • 2 teaspoon baking powder
  • ½ cup brown sugar 
  • 1 pinch of salt
  • 1 tablespoon of vanilla essence
  • 1 teaspoon cinnamon powder
  • 5 ripe bananas
  • ½ cup coconut oil
  • 1 cup milk

Preparation:

  1. Mix the flour, baking powder, salt and cinnamon powder. Keep aside. 
  2. In a bowl, mash the bananas and add in the sugar. Mix well until all the sugar dissolves. 
  3. Add the coconut oil, milk and vanilla essence and mix well.
  4. Finally, add the flour mixture and combine well. 
  5. Transfer your batter into a buttered cake mold. Bake in your preheated oven at around 160°C for 40 to 45 minutes.
