Tired of the usual coffee cake? This vegetarian Vanilla Chai Cake is a refreshing change, showcasing myteabox’s Vanilla Chai. I kept the rest of the ingredients minimal to let this Vanilla Chai shine, and the result is a flavourful and heartwarming vegetarian cake that’s easy to make.

I received this Vanilla Chai during my last shopping haul from myteabox.mu. I wanted to collaborate with myteabox for a while because I love their teas. I remember mentioning to Zaïra from myteabox that I wanted to try making cakes and desserts with their tea blends because they’re so flavourful. She sent this Vanilla Chai so I could start experimenting.

Since it’s Valentine’s Day this week, it’s the perfect excuse to use my mini heart cake mould. Any cake mould will do! After all, baking is all about getting creative in the kitchen and whipping up something delicious with love. Below, I used my ring mould as well since my heart mould is really tiny.

This vegetarian cake is easy to make, and it’s completely egg-free! And it’s perfect for those simply looking for a light eggless cake to bake. Look how gorgeous it is inside.

Cozy up with this delicious Vanilla Chai Cake! ☕🍰 Made with @myteabox.mu Vanilla Chai, this egg-free vegetarian cake is perfect for Valentine’s Day or any day you need a warm treat. Ingredients: • 300 G plain flour • 2 ½ teaspoons baking powder • 4 tablespoons milk powder • 100G demerara sugar (if you want to go sweeter, you can make it 150G) • 3 tablespoons raisins • 2 teaspoons Vanilla Chai • 1 mug (Around 380 ml water) • 1 pinch of salt Preparation: 1. Prepare the tea. In a bowl, mix flour, baking powder and milk powder. 2. Whisk butter and sugar. Add 350 ml of tea. 3. Mix in the flour mixture and lastly, mix the raisins and salt. 4. Vanilla Chai Cake

Ingredients
  

  • 300 G Plain Flour
  • 2 1/2 Teaspoons Baking Powder
  • 4 Tablespoons Milk Powder
  • 100 G Demerara Sugar (If you want a sweeter cake, you can add another 50G)
  • 150 G Butter
  • 3 Tablespoons Raisins
  • 2 Teaspoons Vanilla Chai (we're using myteabox's Vanilla Chai)
  • 350 ml water
  • 1 pinch salt

Instructions
 

  • Brew the Vanilla Chai. I used 2 teaspoons but if you want a stronger flavour, you can add 1 more. Put to boil for a few minutes and cover with a lid to allow it to infuse properly for 5 minutes. Then, leave it to cool. In my video I used 2 mugs because I wasn’t sure how much I would eventually need. 350ml is enough and I drank the rest (so flavourful!)
  • In a bowl, mix flour, milk powder and baking powder.
  • In a larger bowl, whisk together the butter and sugar. Then pour in the 350ml of Vanilla Chai.
  • Add in the flour mixture in 3 parts and keep whisking.
  • Last, add the raisins and pinch of salt.
  • Pour in a buttered mould. Tap the mould against your counter top.
  • Bake in a preheated oven at 160 C for 45 minutes.

Notes

You can use any cake mould you want. I used 2 because since it’s valentine’s day, it’s the perfect excuse to make a heart shape cake.
