Toufe Pomme de Terre (potatoes)

If there’s one dish I love since I’m a kid, it’s my mom’s Toufe pomdeter (potatoes). It’s a healthy dish, using just a tiny bit of oil. It’s cooked using a gentle stewing method. The success of this simple dish is garlic cloves and thyme (plenty of it!).

Who doesn’t love potatoes?  The real secret to nailing this Mauritian dish is using local potatoes; they have this wonderful melt-in-your-mouth texture and turn a beautiful golden colour when cooked. It makes all the difference!

With roughly 20 minutes of cooking time, you get a simple yet yummy dish that’s best paired with rice, lentils and a yummy satini koko (coconut chutney). You can also add my toufe bred ziromon to this combo for a perfectly balanced meal.

The Recipe

Toufe Pomme de Terre

Ingredients
  

  • 1.5 KG Potatoes
  • 1 small Onion chopped
  • 2 Garlic cloves sliced
  • Thyme (as much as you want)
  • salt to taste
  • 3/4 Tablespoon cooking oil
  • Parsley (a handful)

Instructions
 

  • Heat your oil in a large wok over a low flame. Cook the onion and garlic until they golden and add the thyme and potatoes. Season with salt and stir.
  • Cover and cook for some 20 minutes. Stir occasionally. Once your potatoes are all soft and golden, it means your dish is ready.
  • Sprinkle with parsley and serve.
