Tofu Chop Suey
This is a chinese inspired dish that’s easy to prepare. The flavours work well together and you can serve it with some rice or couscous. You can also use chicken and fish instead of Tofu for a non-veg version.
Ingredients:
- 250 g Tofu (Cut into squares)
- 1 big onion (sliced)
- 1 cup chopped green bell peppers
- 1 cup chopped yellow bell peppers
- 1 cup chopped red bell peppers
- 1 big carrot cut lengthwise
- 2 cups bok choy
- 2 garlic flakes, thinly chopped
- 1 ginger clove, thinly chopped
- 1 tablespoon vegetable oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon cornflour
- 1/2 cup water
- 1 tablespoon olive oil
- salt to taste
Preparation:
- In a saucepan, sauteed the garlic and some ginger in some olive oil.
- Add the onions, carrots, peppers and Tofu. Let cook for 5 minutes.
- Add the bok choy
- Stir in the soy sauce and oyster sauce.
- Mix the cornflour in some water and pour into the pan. This will help to create a thick sauce.
- Season with salt according to your taste
- Garnish with some ginger before serving.
