Savory Crepes

Hi everyone! First I think I owe you all an apology for suddenly disappearing. As you all know, I’m from Mauritius and the past month has been crazy.

We have all been keeping an eye on the media, knowing that the Covid-19 was going to hit our island at any moment. And it happened. We have been under lockdown for days now.

With the sudden changes, I’m sure, many of you found your projects suddenly changing.

For the first few days of the lockdown in Mauritius, I wanted to write a post to ask everyone to keep safe. To be honest with you all, I did not know what to say. I felt that I would have been repeating what everyone is saying, did you really need all that?

As the days went by, I started to think about what I would share with you regarding food. Since the lockdown took most of us by surprise, I have been limiting my cooking to very simple meals. My mom has been doing the same too. Nothing fancy, just using things that we have at home and limit our trips to the supermarket. It’s not easy at times but with the danger lurking outside, the only way to keep everyone safe is to stay inside and limit those outings. I decided to share some simple recipes with you all which can help you going, despite the current situation.

Savory Crepes Recipe

Today I’m back with a very simple recipe, using what I have in my pantry to make some easy crepes without using regular white flour. Yes, you don’t need flour to make crepes. I will be using chickpea flour (besan) to make these savory crepes and some semolina (greo). You can have that with some chutney or just a little bit of butter.

Crepes sale is what we usually have at teatime and if you ran out of flour or could not find any at the nearby store, this is a handy alternative.

Ingredients:

  • 12 tablespoon chickpea flour/besan
  • 4 tablespoon semolina/greo
  • 1 teaspoon turmeric powder
  • 1 tablespoon cumin powder
  • ½ teaspoon chilli powder (optional)
  • Salt to taste
  • Water
  • A bit of butter or oil to cook

You can also switch spices depending on what you already have in your pantry. You can add a little bit of masala powder or any spice mix that you already have and some herbs as well.  For example, a bit of coriander leaves or curry leaves.

Preparation:

1. Mix all your dry ingredients

2. Add water little by little and mix carefully. You are looking for a thin batter, exactly like a crepe batter. If you’re using fresh herbs, add them into your batter when you are satisfied with its consistency.

3. add salt according to your taste.

4. Place your pan on a low heat and add a bit of butter or oil. Once its all heated, pour a bit of the batter carefully, forming a circle. Smaller crepes are easier to flip while you may break larger ones. Let it cook for 2 to 3 minutes until you can see that it’s all dry. That’s when you’re ready to flip it. let the other side cook for 1 to 2 minutes. Transfer to a plate. Add a little oil or butter to your pan and repeat the same steps for your next crepe.
