Poutou

Poutou is a popular sweet dish in Mauritius. You will usually find it in the vegetable markets where cake vendors sell them. They even have this special steel cylinder mold that they use. Made with ground rice and desiccated coconut, Poutous are absolutely delicious. The traditional version is made with that special steel mold that’s cooked bain marie. (steamed). 

Once the poutou are ready, you leave the mold to cool a bit and then unmold it carefully. The poutous are sliced with a thread usually and tossed into some more desiccated coconut.

My version is very simplified but yummy. I use a normal muffin tray and I will bake it bain marie style in my oven. Of course, it doesn’t taste exactly the same as the traditional treat but it’s a great alternative. 

Today, we have Laurie from Loveys & Lipsticks for an amazing collab! Laurie is an amazing and talented illustrator, mom, blogger & vlogger. We wanted to collaborate for some time and we finally did!

Laurie has provided the illustrations for the poutou recipe and she may also vlog about it! This was a very exciting and fun collab, filled with giggles and creativity.

Ingredients

  • 100 g ground rice
  • 1 tablespoon softened butter
  • 50g dessicated coconut 
  • 1/2 teaspoon vanilla extract 
  • 40g sugar
  • 1/4 teaspoon baking powder
  • 150ml milk

Cooking Utensils:

A muffin tray or any oven tray.

Another oven dish that is larger than your baking tray for bain marie.

Preparation:

1. Mix all the dry ingredients in a bowl. 

2. Stir in the butter, milk and vanilla extract.

3. Leave to rest for 15 mins

4.  Meanwhile, preheat your oven and butter your muffin tray or any baking mold you intend to use. 

5. After 15 mins, it is time to pour the batter into the muffin tray, fill each cup halfway as the poutou will rise while cooking.

6. The poutou will cook bain-marie in the oven. Put some water to boil. Next, place your muffin tray in the middle of the larger oven tray.

7. Adjust the oven temperature to 150 degrees. Place your oven tray in the oven and pour the hot water until it touches the muffin tray halfway.  (The safest way so you fo not spill hot water on yourself).

8. Bake for 15 to 20 mins

9. Once your poutou are ready, leave them to cool for a few minutes before unmoulding them. 

10. In a small bowl, pour some dessicated coconut and coat each poutou.
