Peas Pancakes
How to turn boring peas into an exciting meal?
Peas can be dull and boring. Yet, they’re so rich in fiber. Here’s my easy and creative way to cook peas; my peas pancakes. To add flavour, I use an onion and a bit of turmeric. The oats gives a crispy texture.
These pancakes are healthy, nutritious and of course super delicious and far from boring!
Ingredients
- 1 cup frozen peas
- 1 medium sized onion
- 1 cup oats
- 1 teaspoon turmeric
- 1/2 cup yoghurt
- water
- salt to taste
Preparation
1. Soak oats in around 3/4 cup water for 15 mins.
2. In a blender, mix chopped onion, yoghurt, turmeric until it’s all blended. Transfer to a bowl.
3. Next, if you are using quick oats, transfer to the bowl. If you’re using rolled oats, run them into your blender before adding to the bowl.
4. Mix well. Next add around 1/2 cup to 3/4 cup water gradually depending on the thickness you want for your crêpes. If you’re looking for a thick consistency (like American pancakes), you need less water for a thick batter. If you’re looking for the consistency of French crêpes, you need more water for a thinner batter.
5. Heat your pan on medium flame and add some butter or oil to cook.
6. Add around 2 ladles of batter. Cook on 1 side for around 4 mins, until it’s dry, then flip and cook for another 2 minutes.
7. You can serve with butter or a chutney or any fillings you want.
