Olive & Tomato Cake
This Olive & Tomato Cake is easy to prepare and delicious. It’s one of my mom’s recipes but I wanted to share it with you because of its simplicity. It’s perfect for parties or picnics. The festivities are coming and you’re going to impress your friends with this cake!
Ingredients
- 300 g multipurpose Flour
- 2 1/4 teaspoons baking powder
- 125 ml olive oil
- 200 ml milk
- 4 eggs
- 150 g grated cheese
- 1/2 cup black and green olives
- 1 tomato
- 1 tablespoon oregano
Preparation
- Sieve flour and add baking powder
- In another bowl, mix olive oil with milk. Add the eggs, one by one and keep mixing.
- Pour the flour and baking powder mixture and incorporate
- Dice the olives and tomatoes and add to the mixture
- Add the oregano, salt and pepper, and the cheese
- Grease a cake mold with butter and pour in the batter
- Bake at 160C for around 40 minutes
