Mango Barfi
What do you do when you have too many ripe mangoes at home?
Today I’m sharing a simple dessert, inspired by a sweet dish from India. It’s sugar-free dessert as we’re using ripe mangoes in them! They’re a delightful treat and super easy to make!
Let’s make sugar-free Mango Barfi!
Ingredients:
- 1 ripe mango
- 1/2 cup of milk
- 3 cup of grated coconut (you can use fresh coconut or desiccated coconut)
- A pinch of saffron mixed with 2 tablespoon milk (zafran)
- ¼ teaspoon Cardamon powder
Preparation:
- Chop your mango and toss in a blender with a cup of milk. Blend until it forms a smooth puree. You do not want mango chunks in this.
- Transfer the mixture to a saucepan over medium heat. Once the puree is warm, add in the coconut and mix well. Add the saffron mixture. Keep stirring constantly for around some 10 minutes until it starts thickening.
- Keep stirring the mixture and cook it for another 15 to 20 minutes on a medium flame. You want it to absorb most of the moisture from the milk and be very thick in consistency.
- Next add your cardamon and mix well.
- Transfer the mixture to a tray and smoothen it out. Leave it to cool for some 30 minutes.
- Using a knife, cut small squares and leave it to cool completely.
- Once cold, your barfi are ready. You can store these in your fridge for up to 4 days.
Tip:
If you use freshly grated coconut, you’ll have some crunch in your barfi.
