Koutia Frisiter (Ambarella Pickle)
Ambarella, known as frisiter in Mauritius, is a rare fruit that can be found in many tropical countries. The fruit can be eaten raw and is slightly crunchy and has a distinctive sour taste.
Frisiter has various health benefits. First, it is a rich source of vitamin C, vitamin A and antioxidants. The fruit also helps with digestion as it contains a lot of fiber.
Today we’re sharing another Mauritian classic, the koutia frisiter (Ambarella Pickle). Koutia is a pickle that we serve as a side dish with our Mauritian dishes.
Ingredients
- 10 raw Frisiter
- 3 garlic cloves
- 6 small green chilli
- 3 tablespoons pickle spices
- 1/2 teaspoon turmeric
- 3/4 teaspoon salt
- 2 tablespoon oil
Preparation
- Peel and wash the Frisiter
- Grate the Frisiter roughly
- Add 1/2 teaspoon of salt.Mix and let sit for 30 minutes.
- Squeeze out all the water from the grated fruits.
- In a bowl add the oil, pickle spices, crushed garlic, chilli and turmeric and mix. Add 1/4 teaspoon salt. After all the spices are well combined, add the Frisiter and mix well.
- Store in an air tight jar. You can serve immediately if you wish but it is best to serve it at least after a few hours for the best flavors
