Fried Noodles (Eggs & Veggies)

Today we’re bringing another local dish on the table, this time its the fried noodles, a dish heavily influenced by Asian cuisine. It’s one of my favourite dishes and you can find it almost everywhere on the island. Today we’re making a quick and easy one with eggs and loads of veggies. You can saute chicken or shrimps and stir them in with the rest of the ingredients if you wish.

Ingredients

  • 250g fresh noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce/ or mushroom oyster sauce
  • 2 garlic cloves (crushed)
  • 1 teaspoon sugar
  • salt
  • pepper
  • 1 cup grated cabbage
  • 1 cup grated carrots
  • 1 cup chopped bok choy
  • 3 eggs
  • 1 finely chopped onion
  • 1 tablespoon finely cut chives
  • 1 tablespoon spring onion finely chopped

Preparation

  1. In a large bowl, mix the fresh noodles with the soy sauce, oyster sauce, some salt and pepper and sugar and keep aside.
  2. Beat the eggs with salt and pepper and in a large wok, fry the eggs.
  3. Once the eggs are done, slice them into thin lengthy pieces and keep aside.
  4. In the same pan, add some more oil if needed and add the onion and garlic. Sautee for a few minutes and add the carrots, cabbage and bok choy. Next, add in the noodles and stir. Add the eggs, the chives and spring onion and stir.
