Fried Noodles (Eggs & Veggies)
Today we’re bringing another local dish on the table, this time its the fried noodles, a dish heavily influenced by Asian cuisine. It’s one of my favourite dishes and you can find it almost everywhere on the island. Today we’re making a quick and easy one with eggs and loads of veggies. You can saute chicken or shrimps and stir them in with the rest of the ingredients if you wish.
Ingredients
- 250g fresh noodles
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce/ or mushroom oyster sauce
- 2 garlic cloves (crushed)
- 1 teaspoon sugar
- salt
- pepper
- 1 cup grated cabbage
- 1 cup grated carrots
- 1 cup chopped bok choy
- 3 eggs
- 1 finely chopped onion
- 1 tablespoon finely cut chives
- 1 tablespoon spring onion finely chopped
- oil
Preparation
- In a large bowl, mix the fresh noodles with the soy sauce, oyster sauce, some salt and pepper and sugar and keep aside.
- Beat the eggs with salt and pepper and in a large wok, fry the eggs.
- Once the eggs are done, slice them into thin lengthy pieces and keep aside.
- In the same pan, add some more oil if needed and add the onion and garlic. Sautee for a few minutes and add the carrots, cabbage and bok choy. Next, add in the noodles and stir. Add the eggs, the chives and spring onion and stir.
