Easy Veggie Filling For Wraps

Sometimes you’re in a rush or just want to make something simple for lunch/dinner.  When I’m in that state, I make this quick and easy veggie filling which is great or wraps or even rotis.  I use frozen veggies since that makes it even quicker and within 15 minutes you have a very satisfying meal.  You can use it as a pizza topping as well if you wish, especially if you feel like having a spicy pizza.

Ingredients:

  • 1 Cup corn kennels
  • 1 Cup mushrooms (Chopped)
  • 1/2 Finely chopped onions
  • 1 Tablespoon Masala powder
  • Salt & Pepper
  • 1 garlic clove
  • 1 Teaspoon cumin powder
  • 1 tablespoon oil

Preparation:

  1. In a medium saucepan over a low heat, add the onions, corn kennels, mushrooms and garlic.  Pour a tablespoon of oil and stir.  Add a pinch of salt and cover the saucepan for 3/4 minutes.  This will lead to the vegetables releasing some moisture.
  2. Next, remove the lid and stir occasionally.  Once the vegetables are cooked and the liquid has reduced (5-10 minutes), add the rest of the ingredients and stir.
  3. At this point, taste and added salt and pepper if needed.  Your filling is ready!
  4. If you are serving it in a wrap, you add some salad, cheese and any favorite dip/sauce such as mayonnaise or tahini sauce.
