Easy Veggie Filling For Wraps
Sometimes you’re in a rush or just want to make something simple for lunch/dinner. When I’m in that state, I make this quick and easy veggie filling which is great or wraps or even rotis. I use frozen veggies since that makes it even quicker and within 15 minutes you have a very satisfying meal. You can use it as a pizza topping as well if you wish, especially if you feel like having a spicy pizza.
Ingredients:
- 1 Cup corn kennels
- 1 Cup mushrooms (Chopped)
- 1/2 Finely chopped onions
- 1 Tablespoon Masala powder
- Salt & Pepper
- 1 garlic clove
- 1 Teaspoon cumin powder
- 1 tablespoon oil
Preparation:
- In a medium saucepan over a low heat, add the onions, corn kennels, mushrooms and garlic. Pour a tablespoon of oil and stir. Add a pinch of salt and cover the saucepan for 3/4 minutes. This will lead to the vegetables releasing some moisture.
- Next, remove the lid and stir occasionally. Once the vegetables are cooked and the liquid has reduced (5-10 minutes), add the rest of the ingredients and stir.
- At this point, taste and added salt and pepper if needed. Your filling is ready!
- If you are serving it in a wrap, you add some salad, cheese and any favorite dip/sauce such as mayonnaise or tahini sauce.
