Easy Fish Cakes
Cooking yummy dishes does not have to be complicated at all! These fish cakes are super easy to make and do not require too many ingredients. If you have last minute guests or you need a quick and easy meal, these delicious fish cakes just perfect! Plus, it’s an absolute time-saver!
I decided to keep it very simple. I’m using canned tuna in this recipe which saves so much time. Concerning the potatoes, if you peel and chop them prior to boiling, it will speed up the cooking process. And while they are boiling, you can go ahead and chop your onions and coriander. You can also add other spices to this mixture if you wish.
I just want to add one last tip about the potatoes. You want them to boil until they are very soft. This way, when you mash them, it will be super easy and fast. I also find that mashing them while they are still hot is much easier as they are still very soft.
Ingredients:
- 1 Can Tuna/Around 120G (Drained).
- 1 Medium size potato
- 1 Egg
- 1 medium size Onion
- 1 Tablespoon Chopped coriander
- 1/2 Teaspoon mixed herbs
- Salt & Pepper to taste
- 1 Tablespoon Olive oil
Preparation:
- Peel and chop the potato. In a saucepan, let it boil until it is very soft.
- Once the potatoes are soft, you can start mashing them immediately.
- Add a can of Tuna. Make you that you have drained the oil from the Tuna.
- Add in the onion and spices and mix.
- Add a beaten egg and a tablespoon of olive oil and mix until well combined.
- Set a baking sheet on your oven tray and start forming little patties out of your batter. You may brush the patties with some oil if you wish to have a very golden brown crust but it’s not necessary.
- Bake at 180C in your oven for around 15/20 minutes. After the first 10 minutes, flip the patties over and cook for another 5/10 minutes.
- Et voila! Your fish cakes are ready! Serve with your favorite dips and sauces.
P.S: If you are wondering about the dip I used, it’s a homemade cauliflower and peas dip which is super healthy. I will post the recipe soon! I promise!
