Coconut Butter
After successfully attempting to make peanut butter (oh yes…super yummy!), I decided to try making my own coconut butter…I mean…hey…I’m an islander, coconut is in my blood!!! So I gave it a try and I love it! I think its a bit like the cream of Oreo biscuits minus the sugar! They work really well with biscuits or toast.
Ingredients:
- 1 Cup Desiccated Coconut powder
- 2 to 4 tablespoon of Organic Coconut oil.
Preparation:
- In your grinder, add your desiccated coconut and pulse a few times until you notice that the coconut is starting to look moist and sticky.
- Next, add a tablespoon of oil and pulse again. It will start to form a paste after some time. Note that it can take some time. Pulse a few times, open your grinder and stir before pulsing again.
- If you want your butter to be stickier (like mine), you will use about 3 tablespoon of oil. If you want a creamier texture, you will need to more oil gradually and pulse some more.
- Once your coconut butter is ready, pour it into an air-tight jar.
