Chouquettes

We decided to start 2020 on a sweet note with these tasty chouquettes. It’s the perfect time to cheat on the strict diets (if you’re on one) or just have a little treat. After all, the festivities are still going on for some of us.

With this recipe, you’ll also learn to make a quick and easy lemon icing that you can use in other sweet treats (Cupcakes, pastries, etc.)

Ingredients

For the chouquettes

  • ¼ Litre water
  • A pinch of salt
  • 80g butter
  • 125g flour
  • 2 or 3 eggs

The icing: (Optional)

  • 5 to 6 tablespoons of icing sugar
  • 2/3 teaspoons of freshly squeezed lemon juice

Preparation

  1. In a saucepan, combine butter, water and salt and bring to a boil
  2. Remove from the heat and add flour and mix well, until it forms a ball
  3. Allow the batter to cool for around 5 minutes
  4. Add eggs, one by one, beating well after each addition.
  5. Next, take tablespoons full of mixture and place on greaseproof paper.
  6. Bake at 200C in a preheated oven for around 20 minutes, until they turn a golden colour.
  7. Once your chouquettes are ready, let them cool.
  8. In a small bowl, mix the sugar and lemon juice until it thickens. If the mixture is too liquid,add more sugar and if it is too thick, add another teaspoon of lemon juice.
  9. Using a spoon, pour a little bit of the mixture on each chouquette.

Usually, we sprinkle sugar pearls over the chouquettes but I didn’t have any at hand, so I decided to try this quick icing as a substitute. It also added more flavour to the chouquettes.
