Butter Chicken

Ingredients:

For the chicken:

  • 500g boneless chicken breast
  • 1 tablespoon ginger paste
  • 2 tablespoons garlic paste
  • 1 tablespoon red chili paste (or more if you love it spicy)
  • Salt to taste
  • Oil to cook the chicken

For the gravy:

  • 500 g chopped tomatoes
  • 2 big onions (roughly cut)
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon garlic paste
  • 1 tablespoon garam masala
  • 2 tablespoon sugar
  • 1 tablespoon chili powder (or more)
  • 1 cup cashews
  • 2 tablespoons butter
  • 4 tablespoons cooking cream

Preparation:

  1. Marinate the chicken with its spices and keep aside.
  2. In a pan, add some oil and cook the chicken on a medium flame. Once ready, keep it aside.
  3. Using the same pan, add onions and a tablespoon of butter. Once the onions are translucent, add the garlic paste, garam masala, chili powder and cashews. Mix well. Add the tomatoes and sugar and salt. Stir well and let it simmer for 20 minutes.
  4. Pureed the above mixture.
  5. Strain it back into the pan.
  6. Add butter and 2 tablespoons of cooking cream
  7. Add the chicken and let simmer for another 10 minutes.
  8. Pour in a serving bowl and garnish with remaining cream and coriander leaves.
