Avocado & Shrimp Salad
If you’re craving something simple, healthy and delicious, here’s the perfect meal that’s not only rich in flavors but very healthy too. This Avocado & Shrimp Salad has become a recent favorite dish for lunch or dinner. You can have it on its own or use it as a filling for your wrap and sandwiches.
Ingredients
- 1 Ib shrimps (peeled and cleaned)
- 2 avocados
- 1 big onion
- 2 tomatoes
- 3 tablespoons of olive oil
- some cilantro leaves
- 2 large garlic cloves
- 2 tablespoons of lemon juice
- salt & pepper
- 1 tablespoon butter
Preparation
- Marinate the shrimps with grated garlic, some of the lemon juice, salt & pepper for at least 20 minutes.
- In a large bowl add a tablespoon of olive oil, 1 tablespoon of lemon juice, some pepper and salt and mix.
- Add diced onions and tomatoes and chop the avocados into larger chunks before adding them. Mix carefully as avocados are quite soft. Keep the salad in the fridge.
- Next, in a pan over medium heat, add a tablespoon of butter and 1 tablespoon of olive oil. As soon as the butter melts, add the shrimps and marinade and let sauteed for at least 5 minutes or until they are cooked.
- Once the shrimps are ready, add them to the avocado salad along with the oil and butter in which it has cooked.
- Sprinkle with finely chopped cilantro before serving.
