Cereal Bars

Ingredients
  

  • 1 Cup Quick Cooking Oats
  • 1/2 Cup Almonds (chopped)
  • 1/2 Cup Shredded Coconut
  • 1/4 Cup dried prunes (unpitted)
  • 1/4 Cup Raisins
  • 1/4 Cup Honey (you can substitute with maple syrup)

Instructions
 

  • Soak the dry prunes for 30 minutes. Next, transfer in your blender and blend till it forms a puree.
  • Soak the raisins and cranberries for 30 minutes. Drain and keep aside.
  • On a very low flame, roast the oats for 10 minutes while continuing to stir. Add the shredded coconut and almonds. Mix and remove from the heat.
  • Mix in the Prune puree, the cranberries and raisins and the honey.
  • Place a baking sheet in a rectangular tray. Pour the mixture in the tray and flatten it out.
  • Cut into rectangular or square shapes and let set.
